Summary: The proximate composition and sensory quality attributes of mangrove crab, Ucides cordatus, were investigated. The aim of this study was to demonstrate the nutritive value and sensory parameters of meat of crabs collected at different salinity points. There were no significant differences in the moisture content on meat, but protein and ash contents were significantly higher (P<0.05) in some sites. The sensory analysis showed that these differences influenced the odor and appearance of crab meat. The quality attributes depend on the crab collection site.
