Summary: Resumo It is well known that wine has a positive e ect on the human health, which is due to phenolic compounds that have an important role as antioxidant and anti-in ammatory properties. The phenolic compounds are present in the wines at di erent concentrations, which may be mainly due to factors related to genetics, vineyard management and winemaking procedures.
