Summary: Este estudo teve como objetivo desenvolver uma metodologia para a análise da qualidade sensorial de amêndoas de castanha-de-caju e investigar o perfil sensorial das amêndoas das principais cultivares de cajueiro registradas pela Embrapa: ‘CCP 09’, ‘CCP 76’, ‘CCP 1001’, ‘BRS 189’, ‘BRS 226’, ‘BRS 265’, ‘BRS 274’, ‘BRS 275’, ‘EMBRAPA 50’ e ‘EMBRAPA 51’.
