Summary: RESUMO - Este estudo objetivou descrever o sistema de gado de corte predominante em Goiânia, Goiás, com destaque para o custo de produção. Informações obtidas em reunião (painel) junto a pecuaristas, técnicos e pesquisadores foram a base da descrição. Uma arroba (15 kg) de carcaça de boi gordo teve um custo total de R$ 67,68 na região de Goiânia, bem acima do preço médio no ano de 2005, de R$50,00. Portanto, o sistema não foi capaz de remunerar integralmente os fatores de produção empregados, caracterizando-se um processo de descapitalização. O custo operacional, onde não se incluem os juros sobre o capital, foi de R$ 49,55. Este resultado indica que é possível repor instalações, equipamentos e touros ao final da vida útil, mas não há capital excedente para ampliar o negócio. Considerando apenas os desembolsos, o custo foi de R$ 21,52. As margens bruta e operacional foram positivas, indicando boa saúde da empresa no médio prazo. Porém, no longo prazo o desempenho pode vir a ser comprometido já que o lucro foi negativo. ABSTRACT - This work describes the beef production system prevailing in Goiânia, Goiás State, Brazil, with emphasis in the production costs. Information from a panel gathering farmers, researchers and consultants was the basis for the description. The total cost per 15 kg carcass was R$ 67,68 (about US$ 28) in Goiânia region, value significantly higher than the average market price on 2005 (R$ 50,00). So, the system is not capable to pay totally the production factors employed, resulting a capital lost. The operational cost (no interest on capital) was R$ 49,55 (about US$ 21). This result indicates that it is possible to replace buildings, equipments and bulls at the end of the life cycle, but there is no capital surplus to expand the business. Considering only the payments, the cost was R$ 21,52 (about US$ 9). The gross and operational margins were positive, indicating good “health” of the company in the medium period. However, in the long period the performance can come to be committed since the profit was negative.
