Summary: Resumo: Objetivou-se determinar as características morfométricas de cordeiros Santa Inês e Dorper x Santa Inês. Foram utilizados 30 animais, num delineamento inteiramente casualizado, 15 Santa Inês e 15 mestiços Dorper x Santa Inês, submetidos à mesma dieta e, ao atingirem peso médio de 25kg foram encaminhados para o abate. Foram determinados os constituintes não carcaça caracterizados como pesos do sangue, pele, pulmão, traqueia, coração, fígado, rins, cabeça, patas, trato gastrointestinal, testículos e vesícula. O genótipo influencia os componentes não carcaça de cordeiros Santa Inês e Dorper x Santa Inês, com o mestiço apresentando pele e testículos mais pesados. Components not sheep carcass of Santa Inês and Dorper x Santa Inês Mestizo. Abstract: This study aimed to determine the morphometric characteristics of Santa Ines lambs and Dorper x Santa Inês. Were used 30 animals in completely randomized design, 15 Santa Inês and 15 crossbred Dorper x Santa Inês, subjected to same diet, and when they reached an average weight of 25kg were sent to slaughter. Were determined and studied the constituents not characterized as carcass weights of blood, skin, lung, trachea, heart, liver, kidneys, head, legs, gastrointestinal tract, bladder and testicles. Genotype influences the non carcass components of Santa Ines lambs and Dorper x Santa Inês, presenting with skin and mestizo heavier testicles.
