Composting is a biological process of organic matter decay performed by fungi and bacteria that recycles waste and produces a bio-compost, which, when adequately produced, is a valuable and efficient input for agricultural production. The method was developed by Cornell University (USA) and perfected to Brazilian conditions by Embrapa Dairy Cattle; it is an alternative to common practices of disposing animal carcasses, like burial, throwing them away in ditches, burning or even leaving them out in the open, which causes problems like soil, water and air contamination and transmission of diseases.
