Food Engineer (1982) with Master (1988) from the State University of Campinas (Brazil), and Ph.D. from the University of Reading (England, 1996). He is a researcher at Embrapa (Brazilian Corporation for Agricultural Research) based at the Embrapa Food Technnology (Rio de Janeiro, RJ) since 1990, where he acted as Director from August 2003 to April/2008. He integrated the Labex Program of Embrapa in Europe based at the University of Burgundy and the Agrosup Dijon, in France, from May 2009 to August 2011. He is a former member of Embrapa Food Safety Portfolio Steering Committee. He is Honorary Vice-President of the International Commission of Agricultural Engineering (CIGR), where he is also Honorary Chair of the Technical Board of the Section VI Bioprocess (Food and Post Harvest Engineering) and Chair of the Food Safety Working Group. Dr Rosenthal is the Brazilian representative (Deputy) at the ISEKI-Food Association and also Brazilian Ambassador at the Global Harmonization Initiative. He is a member of the Editorial Board of Food Engineering Reviews Journal, Food Science and Human Wellness Journal, Journal of Future Foods and associated editor of Journal of Post Harvest Technology and Innovation. He is a member at large of the International Society of Food Engineering, linked to the IUFoST. He is also former Vice-President and Director of the Brazilian Society of Food Science and Technology. He is Chair of the FoodTech Hub Brazil, and member of the Brazilian Subcommittee of Science and Technology of the International Dairy Federation He has published several papers in high impact index international journals, and coordinated and integrated International and Brazilian research projects. His main areas of research are emerging technologies (particularly high pressure) and thermal processes applied to fruit, vegetable, meat, fish and dairy products.
