Context

The growing offer of plant-based products (i.e. those that resemble foods from animal sources, such as veggie burgers) has increased the demand for protein ingredients. The fact that beans are some of Brazil's most representative pulses triggered the develoment of a protein concentrate from the legume as an alternative to the soy and pea ones, which are well-known in the market. Beans are the ideal raw material to obtain a protein concentrate given the large domestic production of the staple food, including for exports.

About the asset

High-quality pinto bean protein concentrate, made of domestic raw material and with competitive characteristics in comparison with others found in the market, such and soy and pea protein concentrates. With 76 g protein for every 100 g of the product, that is, 76% protein, the ingredient allows the addition of protein content to plant-based foods that resemble products from animal sources, such as hamburgers, breaded foods, sausages, vegetal beverages, and yogurts. Moreover, the protein concentrate can also be used in baked goods, protein drinks and dietary supplements. The research was funded by Embrapa and the Good Food Institute (GFI).

Characteristics in comparison with competitors available in the market
The bean protein can replace the pea protein concentrate, which is often used in the market even though it is majoritarily imported, while beans are a well-known raw material in Brazil. The bean concentrate can also replace other imported ingredients and domestic soy protein, as many consumers prefer not to buy it.
