BRS 015 is an open pollination corn cultivar (varietal), whose grains are white, with better milling performance (softer, easily crushable and with high flour yield) compared to traditional varieties of corn. Due to its composition, the flour obtained from the cultivar is white, even the whole flour, and has lower granulometry — that is, it is thinner. In addition, the starch extraction yield can reach 40%, which helps to give structure and leaves pastas softer. BRS 015 thus presents characteristics that make it an alternative to wheat for flour production, especially for bakery focused on target audiences with restriction of gluten consumption, since corn does not contain this substance. The quality of the grain also makes the variety suitable for the production of green corn. This way, in which corn is harvested and prepared before maturation, grains show a sweeter flavor. BRS 015 white flour corn standardizes a Creole variety cultivated and maintained by family farmers in the southern region of Rio Grande do Sul. They are low-height plants, just over two meters high, which facilitates harvesting and management. The average production is 5,000 kilos per hectare, with one ear per plant. Given its appeal to an audience concerned with health issues, the variety is recommended for eco-based agriculture, meant to audiences such as family farmers, quilombolas and indigenous people. In Rio Grande do Sul, where the cultivar is adapted and recommended, planting takes place from September to December and harvest from January to April.
