This International Cooperation Project – under the aegis of the Africa-Brazil Marketplace – developed in Ghana in partnership with Embrapa Mid-North, proposed the formulation of two products from the cashew pseudofruit: cashew powder (dehydrated through spray drying) to be reconstituted as fruit juice and breakfast cereal with enriched dehydrated cashew. The results indicated that the enriched cashew cereal had good acceptance among Ghanaian consumers. There were tests to obtain spray dried powder from the fruit juice at 12° Brix; however, the yield was low, making new tests with more concentrated cashew juice necessary. Just like in Brazil, Ghana and other African countries are currently expanding their cashew cultivation areas, aiming at a competitive advantage in the nut market. Since there is a lot of waste of the cashew peduncle during the harvest, peduncle-based products can generate extra income for farmers and processors and also meet consumers’ nutritional needs.
