Vegetables are essential foods in a healthy diet because of their supply of vitamins, minerals, and fibers. Additionally, they are sources of bioactive compounds that are related to the prevention of some illnesses. However, the low quality of the vegetables offered in most Brazilian markets reduces their attractiveness and supply, causing losses and waste, with high financial, social and environmental costs for society. The project aims to work on this issue with a focus on communication and technology transfer for three links of the production chain, namely production, market, and consumption, based on the following premises: it is necessary to improve the communication and technology transfer processes for different segments of the production chain, in order to promote integration and awareness of their role and responsibility in vegetable loss and waste; and it is necessary to transform the existing knowledge on the factors that lead to food deterioration and disposal into viable technologies for the different supply chains operating in Brazil.
